Well I love this way of eating..

I'm sold!  I'm not going back to a traditional american diet, nor just regular low carb.  In my 21.5 days so far im very very sold.  I feel amazing!
I can finally drinking my coffee black (I like it iced).  I don't miss the dairy, I'm enjoying the fruits. 

Let me just say, the RED cherries are in season, and they are amazing.  I can just eat and eat them nonstop.  I also feel they are helping me with weightloss.
I'm down to 172lbs, so im down about 7lbs in 21 days. I'll take it!  I couldnt hardly lose weight just low carbing and starving myself on fat fasts etc.  Now I'm eating all i'd like, not counting calories, not exercising as much as i'd like and the weights just commign off.  So that means i'm sold on starting Chalean Extreme again.  I should be hot and buff in no time!  Can't wait!  I'll contue to keep everyone updated.  Really thanks everyone for reading!

Day 15! whoaaa half way thereeee whoaaaa living on a prayerrrrr

ok so im feeling great.. the coffee headaches are finally gone! YAYYY no more caffene/artifical sweetner withdrawls...  Today for brunch I had left over rattattooie (spelling) with ground chicken in it (that was last nights dinner)  and a late lunch I had some left over baby bok choi with fish.  Dinner was slow cooker pork shoulder cooked with onions, tomato, celery and we had mashed cauliflower.  For a snack was a handfull of pumpkin seeds and a smoothie that was a cup of coconut milk, half a banana, half a kiwi and a few blue berries topped and blended with ice. 

I'm only half way there but I could get use to living this way.  I like the simpleness of it, and my meals that I'm making are so much better now.  Its strange for me to say but I don't even miss the butter or heavy cream right now.  I miss mayo (helmans or craft) and I miss cheese but thats it, and its not killing me either, just once in a while im like HECK THIS WOULD BE SO MUCH BETTER WITH MAYO.  I could try making it myself but im not sure how that would turn out.  I don't have a blender.  I have a food processor and a stick blender, I know my magic bullet would not work for that at all.. 

I have been feeding my son our dinner blended in the bullet, he like the paleo thing too lol.  I'm afraid to get my daughter into it because some of the family was worried when my daugher would ask if something was "low carb" even though she didn't know what it ment, she was just saying it because she hears mommy and daddy say it.  They thought I was imposing my strict dieting on my child and she would end up with disordered eating in no time.   I will just feed her as healthy as I can with out worring about it so much.  Eventually I'll phase out the crappy stuff for her like boxed cereals and things.  I need to get her more into eggs. 

I was wondering if anyone eats raw eggs.  On low carb I ate raw eggs all the time in shakes, I wondered if I could turn a smoothie more into a meal with a couple of raw eggs? That would be a great breakfast for me. 
Another thing I wonder about is stevia?  I have a box kit to grow my own stevia, so I was thinking about that and I have a food dehydrator.  Is that even allowed?  I see mixed things like in Robb Wolfs book NO SWEETNERS, but in the book Everyday Paleo she uses raw honey.  I'm really really really not a honey fan so thats kinda out of it for me.. 

Welllllllll I must go, its late and I need to write up my order for vitacost.com (very very inexpensive vitimin/suppliment site and they have great cheap coconut oil there)

sorry its been a while! Today is day 14!

Ok, so I'm still keeping up with the paleo eating, eating clean.  I should be exercising more but im not.  I'm atleast TRYING to get my 10,000 steps in a day. 
I feel pretty good I can't complain. The only thing I still miss is coffee.  I did have a 7-11 ice coffee the other day black with nothing in it (of course except ice) and it was pretty good. 
This morning I had a YUMMY breakfast.  Sauteed spinich, topped with 2 eggs over easy, topped with left over curry ground veal. OMG SO TASTY! 

I snuck a weigh, and I'm down to 175.4 which is great for me!  YAYYYYYY! 

ok time to go, gonna go attempt to drink coffee black with just coconut milk lol

Day 6 down!

Totally stressful day at work today...  It sucked, but oh well.  I'm starting to feel really good, I am already falling in love with this way of life! Had my regular breakfast andlunch, and a totally amazing dinner omg yum!
Baked chicken breast smothered in olive oil, onions, garlic, oregino, basil and pepper.  Also had snow peas tossed in toasted sesame oil and pepper, and fennel tossed in olive oil and sea salt and toasted in the oven...
Well its late for me and I have to work tomorrow...

These are the amazing people im doing paleo for


They are the reason I want to live to 100.. The best things that ever happend to me in my life.  Every morning I wake up and thank God that I have them, I take care of myself so I can always care for them and so they never have to worry about Mommy being sick. 

Dinner Update (for day 5)

So dinner was sooooooo amazing.. I had Swai (fish) baked in the oven over baby bok choi seasoned with garlic powder, dried onions, pepper, and old bay then sprinkled with toasted sesame seed oil. 
OH MY GOD SO TASTY! 

The fish was amazing and the bok choi was so delish.. the funny thing is I think the best part was some of the bok choi that wasn't covered by the fish and the edges got toasted and dried out, IT WAS AMAZING! 

Hey if anyone has any words of wisdom, hints, tips etc please feel free to chime in! 

YAY 5 Down 25 to go!

So today is day 5 and im starting to feel a little better.  ITS ABOUT TIME! 
Between stress of work, stress of having 2 kids and paying bills and taking care of a family.. I really needed to start to feel better.. 
It was so cute, last night we took some of our asparigus and beef and blended them with some water in our magic bullet and the baby LOVED IT!  Pat (hubby) was saying aww our little paleo baby boy!

so breakfast was the same again today
veggie omlett
Snacks was : raw almonds, hard boiled egg, and celery sticks
Lunch was mixed greens with chicken olive oil and vinegar
NO CLUE WHAT DINNER WILL BE YET..

I can't wait till I have an entire week under my belt them im sure that it will be all down hill from there..  This deff is not as easy as just doing low carb was, this is a big change, but obviously im willing to do it..
